Cordigliano d'Otranto (LE)
The restaurant is located in the historic centre of one of the Salento municipalities where Griko is still spoken, as can be guessed from the origins of the name, which invites conviviality. The menu, however, has nothing old-fashioned about it and includes colourful dishes that are the result of original creations by chef-owner Samuele Toma, presented with extreme attention to aesthetics without losing sight of substance.

The farmhouse is located a couple of kilometres from the town centre, on the road to Lecce. A project tenaciously pursued by Andrea and Simona since Manduria was off the radar of foodies, it is now one of the most important gastronomic centres in Puglia. The setting and cuisine, both elegantly curated down to the smallest detail, are ideal for both an intimate dinner and a wedding banquet.

Refinement and contemporary style are the hallmarks of Casale Ferrovia, an intimate and elegant restaurant just a stone’s throw from Carovigno railway station, where carefully selected ingredients are skilfully prepared by chef Maria Lanzillotti to create dishes that showcase the lightness and richness of Apulian flavours, presented with grace by Giuseppe Galeone.

San Giovanni Rotondo (FG)
Massimo Andrea di Maggio brings the philosophy behind his cuisine, ‘from the garden to the stove,’ to the orange grove at the Mercatino del Gusto. The garden is located behind his Masseria Chianchito, at the foot of the Gargano, and is abundant with vegetables and fruit. It is the fundamental basis for his Mediterranean cuisine, which includes meat and fish, marked by the seasonality of tradition, but not without a certain innovative flair.

Although it has only been around for a quarter of a century, it feels like a trattoria from another era, right in the centre, a stone’s throw from the Villa Comunale. It is the realm of Rosario Didonna, a theatrical host, and Mamma Giuseppina, who welcomes unknown guests as if they were old friends. The menu, recited aloud, changes daily depending on one of the richest fish selections in the entire region.
