Masseria del Sale
Manduria (TA)

The masseria is a couple of kilometres from the town, on the road to Lecce. A project tenaciously pursued by Andrea and Simona, ever since Manduria was absent from the radar of gastro-travellers, it is now one of the most important gastronomic centres in Puglia. The ambience and cuisine, both with elegant attention to detail, are ideal for both an intimate dinner and a wedding banquet.

The elegant osteria of Menhir, Gaetano Marangelli’s winery in Terra d’Otranto, celebrates the authenticity of the territory in a contemporary key. Chef Roberto Musarò’s cuisine exalts the vegetables from the farm’s vegetable garden and the spices of the Mediterranean maquis, which become the companions of meat and fish, an expression of Apulia and seasonality. Peels and roots become the hallmark of a sustainable Mediterranean cuisine that delights the palate. NATALE Pasticceria presents a ‘Holy Pasticciotto’ at the end of dinner.

It all started, almost as a joke, with Andrea Congedi’s Bottega dei Sapori, a trattoria near the seafront in Torre San Giovanni, still active but much improved. This was followed by a small luxury B&B in the old town centre and, the latest, on the ground floor of the MONTEFORTE Resort, the ‘Duca’, a perfect combination of territory and the inventiveness of chefs Giancarlo Mele and Alessio Panarella. An open kitchen, a convivial table for 14 (beautiful) and a wine cellar that is by no means taken for granted. In summer, dine on the terrace overlooking the village.

It is the oasis of taste dedicated to his majesty the truffle.Casa Borgia, in Giurdignano, now officially ‘Truffle City’, celebrates the family passion for these precious fruits of the earth, the main protagonists of chef Daniele Seviroli’s cuisine. An intriguing proposal that elegantly mixes sea and land, exalting Apulian tradition and taste.

Although it has only been in existence for a quarter of a century, it looks like a trattoria from another era, right in the centre, a stone’s throw from the Villa Comunale.It is the realm of Rosario Di Donna, histrionic host, and his mother Concetta, who welcomes the unknown guest as if he were an old friend. The menu, recited by voice, changes daily according to one of the richest fish trolleys in the entire region.

Massimo Andrea Di Maggio transfers the philosophy that guides his cuisine ‘from the garden to the cooker’ to the orange grove of the Mercatino del Gusto. The vegetable garden is the one at the back of his Masseria Chianchito, at the foot of the Gargano, generous with vegetables, fruit and vegetables. A fundamental basis for his Mediterranean cuisine, in which there is no shortage of meat and fish, marked by seasonality and tradition, not without a dash of innovation.
